Inspiration on Wheels

For me, coffee has always been about more than just flavor or caffeine. It’s about the connections it creates—the shared moments and community spirit. Unlike my other businesses, where interaction was more indirect, coffee has allowed me to engage directly with our community, whether through conversations in the shop or collaborating with local businesses.

The coffee trailer (and cart) became the perfect way to deepen our community connection, bringing the café experience directly to where people gather. It’s more than just about serving coffee—it’s about fostering relationships and being present in the heart of Jackson Hole. This vision took root in August 2023...

Mekki Jaidi, formerly in New York finance, founded Outpost in Jackson Hole in 2014. He expanded into O2 Cleaning, Terrain, and Provisions. In 2021, he acquired Snake River Roasting Co. He actively contributes to the Jackson Hole community through nonprofit work and lives there with his wife, two daughters, and son.​

August 2023: The Seed is Planted

It all started with a conversation at the Jackson Hole Farmer’s Market. We noticed that market-goers often had to leave the lively atmosphere to find a quality espresso drink. We thought, “Why not bring the coffee to them?”

After months of conversations and planning with the Jackson Hole Farmer’s Alliance, we were thrilled to receive approval in February 2024 to serve our coffee at the market.

Finding the Perfect Canvas

The next step was finding the right vessel for our mobile café. In March 2024, we stumbled upon the perfect canvas: a WW two-horse trailer. It wasn’t without its challenges—working within size restrictions and ensuring it could carry our brand’s essence were top priorities.

We knew we wanted it to have a vintage charm, something that would feel right at home in Jackson Hole.

Building the Dream Team

Serenity, a key member of our team, took charge and purchased the trailer. To bring our vision to life, we reunited our dream team, including the talented folks at Ver Iconica.

The first round of designs was on-brand but felt a bit too serious. We wanted something more playful, something that would not only serve great coffee but also be a conversation starter.

Embracing the Vintage Vibe

My wife and I had a long discussion about the direction we wanted to take. We decided to pivot, moving away from the initial brand guidelines. Instead, we aimed to capture the iconic features of our local landscape—a nod to the past with a playful twist.

The result was a design that felt more aligned with our vision, capturing the essence of Jackson Hole in a way that was both nostalgic and fresh.

The Build-Out

With a clear vision in mind, we got to work. The trailer needed some TLC, so we repaired structural issues, built out the frame, and cleaned it up. Sandblasting it to its bare bones, we prepared it for the transformation.

Then came the fun part—painting it in a way that would turn heads and make it a true reflection of our brand’s adventurous spirit.

The Trailer Comes to Life

By June 2024, our coffee trailer was ready. The branding was in place, and we couldn’t wait to show it off.

Seeing it fully realized was an exciting moment for the whole team—it was more than just a trailer; it was a new chapter for Snake River Roasting Co.

The Fun Begins

Since its debut, the coffee trailer has been nothing short of a hit. We’ve had a ton of fun serving coffee from it at events around Jackson Hole, connecting with the community in new ways.

It’s more than just a way to serve coffee; it’s a way to share the stories and adventures that make this place so special.
